VINIFICATION: Like Ribolla Gialla, it is one of the great autochthonous white Friulian vines. Harvested at the right degree of ripeness, the grapes are destemmed and softly pressed. The juice thus obtained, clear and intact, is added to a fermentation foot previously prepared with the best selected grapes of the same vine. It is then subjected to a slow fermentation in stainless steel tanks at a strictly controlled temperature (16° C) which lasts for about 30-40 days. Maturation continues in steel where a long series of batonnage at graduated frequencies also takes place, in order to obtain a complex, structured and delicately scented wine. We will wait for the month of February for the bottling.
SENSORY NOTES: Bright straw yellow, with elegant greenish reflections. It is a great wine with a finely harmonious, floral and fruity bouquet, with a typical note that recalls bitter almonds, pears, wild flowers and acacia. The taste is soft and velvety, moderately acidic, dry and well structured. The finish, incredibly persistent, is characterized by the typical and unmistakable hint of bitter almond which enhances the typicality of the vine.
PAIRINGS: It goes well with light hors d'oeuvres, cold cuts, broths, dry pasta, fish and white meats. Excellent pairing with San Daniele ham.
