Carpegna Dop San Leo raw ham, pressed and aged for 18 months, a recognized delicacy.
Carpegna has always been a pig breeding area as it is rich in oak trees which provided the animals with food.
It is produced exclusively with legs of pigs born, raised and slaughtered in the Marche, Emilia Romagna and Lombardy.
For centuries, salting has taken place with salt from the Cervia salt pans. The gristle with a mixture of pork fat and natural flavors is still rigorously done by hand by a family of specialist craftsmen.
The delicate and fragrant taste of Carpegna Ham derives from the quality of the raw materials and the skill of those who work them, suitable to be tasted alone; involves cutting strictly by hand.
The color of the slice should tend to be salmon pink, with an adequate amount of solid fat and a pinkish white color on the outside.
