Protagonist of very popular recipes such as Cacio e pepe, Carbonara and Amatriciana, but also excellent as a cheese to be enjoyed on its own, Pecorino Romano DOP can now arrive on your tables.
It is a cheese with very ancient origins, already appreciated by the Romans, who considered it an inevitable product during banquets in the imperial palaces. On the other hand, its ability to be preserved for a long time made it a staple food in the rations during the journeys of the Roman legions. A daily ration was even established to be offered to the legionaries, to complete their diet based on bread and spelled soup: 27 grams each.
This cheese, in fact, gave strength and vigor to tired soldiers: Pecorino Romano DOP is a real concentrate of energy, moreover easy to digest.
The result is a hard, cooked cheese, produced with fresh whole sheep's milk, coming exclusively from farms in the production area, possibly inoculated with natural cultures of native lactic ferments of the production area and coagulated with lamb rennet in pasta coming exclusively from animals reared in the same production area.
Pecorino Romano can be placed on the market with a minimum maturation of 5 months as a table cheese and 8 months as a grated type.
