CHARDONNAY PDO FCO LA TUNELLA CL. 75

Fragrant and fruity aroma reminiscent of small ripe tropical fruits, pineapple and white flowers. Intense straw yellow more intense during aging.

CHARDONNAY Friuli Colli Orientali DOP has a fragrant and fruity bouquet reminiscent of small ripe tropical fruits, pineapple and white flowers. The taste is noble and elegant, slim in body, rightly lively thanks to its good freshness. Shows an intense straw yellow color more intense during aging.

Harvested at the right stage of ripeness, a part of the destemmed and crushed grapes is softly pressed; the other part, on the other hand, is previously subjected to cryomaceration at 4°C for about 36 hours. The must thus obtained is statically cold decanted and subsequently added to a previously prepared fermentation foot (3-4 days before) with the best selected grapes of the same vine. It is then subjected to a slow fermentation in stainless steel tanks at a strictly controlled temperature (16° C) which lasts for about 30-40 days.

The maturation continues in steel tanks where a long series of batonnage at graduated frequencies also takes place, in order to obtain a complex, structured and delicately scented wine. We will wait for the month of February for the bottling.
Excellent as an aperitif or paired with light hors d'oeuvres, soups and broths, egg and fish dishes.
