HISTORY OF A CHEESE. The story goes that a Prior, returning from Spain, stayed for a few months in the Convent of Cremona. A great gourmet, the imposing tonnage denoted it, the Prior one evening tasted a cheese produced on site that he liked. He asked whose work it was. The friars showed him the cheesemaker who supplied them and the next morning he showed up at the farm. "Good man" - he said - "your cheese is very good, but with my advice it will be much better". Amazed and intimidated, the cheesemaker nodded. He had never done that! For days and days the Prior tormented the poor man with advice, albeit correct, but which always sounded like sermons to the dairyman. “Here we are” – the Prior finally said one day – “now you will know how to make the cheese I deserve; I'll be waiting for you in twenty days at the convent with your work”. When the cheesemaker found the stretched curd in his hand, the Prior came to mind and thinking "I would like to strangle that boring one" he twisted the top forcefully. He looked at that strange shape, which actually reminded him of a man of the Church, and completely satisfied, he put it to age. When he brought the cheese to the Convent, the Piore tasted it and satisfied said: "Good son. You deserve applause for the cheese, but two weeks of penance for your irreverence. You made it just like me."
