Fior di latte is a fresh stretched curd cheese made with whole cow's milk from several milkings within a maximum of 24 hours, a factor of primary importance as it is possible to preserve all the organoleptic characteristics of a very delicate raw material. Originally from the Southern Apennines, that of Agerola is particularly renowned for its typical slow processing: the curds obtained are left to rest for at least 14 hours before being stretched and finally becoming FIOR DI LATTE. Indicated to be eaten both raw and especially in the main dish of the Neapolitan tradition: PIZZA.
