Rimacinata is a re-milled durum wheat semolina which ensures good absorption, leavening resistance and extensibility of the dough it gives life to.
It is especially suitable for large doughs with extremely uniform and compact honeycombs, such as Altamura or Pugliese bread. It is advisable to add it to soft wheat flour in percentages ranging from 10% to 20% to improve the flavor of the bread and give the crumb a more yellow colour, while the crust of the bread is golden.
