Tortiglioni are one of the many variations of maccherone, one of the oldest formats born in Naples.
Their name naturally refers to the format and derives from the vulgar Latin tortilla which literally means to wrap in a spiral with a characteristic design of the lathe.
They are a particularly versatile and at the same time original format, which traditionally favors full-bodied sauces.
Tortiglioni are excellent when served with succulent meat-based ragouts. Also good accompanied by tomato sauce or vegetable and tomato sauces. It is a particularly suitable format also for baked pies.
